With summer upon us, many of us are dusting off our grills for some serious outdoor cooking. Grilling is one of my favorite pastimes. It is social cooking, where friends and neighbors come over, frosty drinks come out of the cooler, and the air smells like roasting meats and burning charcoal for miles.

It just so happens that my Coyote Outdoor Grill makes it so much more enjoyable. So today I’m giving away a very special grill to one lucky winner to make your Summer cooking as good as it can be. It contains an easily readable thermostat and you will be wowed by how quickly it gets hot, allowing for an amazing sear on your meat.

Here’s a close up on the knobs. It is amazing how much flexibility they give you in which areas of the grill to heat.

It works beautifully with an array of vibrant vegetables. Season them with salt and pepper, or any other seasoning you prefer and all you need is a little oil and the heat of the grill.

The charred onions were among my favorite. The eggplant was wonderful as long as you season it with salt for a bit first and let it “sweat” before dropping it on the grill.

The meat cooked beautifully as well. Because this beef filet is thinner on one side and thicker on the other I was able to control the heat with the knobs so that one side was at a lower setting.

Grilling thicker cuts of meat allows things to stay juicier. If you have to cook a thinner cut just be prepared to pull it off after only a quick sear.

Once the meat and vegetables are cooked through, remove them from the grill and let the meat rest. This is important to do for at least 10 minutes so that all of the juices stay in the center of the meat. You can cover it with foil to keep things warm. It all looks so delicious, don’t you think? If you’re throwing a backyard bash, or feeling fancy, opt for a colorful summery dish!
