Friends!

I’m so excited to share the first of many cooking episodes here on this site. For a long time you’ve seen many posts here with step-by-step photos which take you through the recipes, but we’ve decided to spice things up around here and give some of the how-to’s in a video format for those of you who learn better this way. As always I’d love your feedback and questions in the comments section below. It is a work in progress, and like a fine venison back strap, it will get better with time.

“Goat Tacos”

Prep Time2 hours 10 minutes
Cook Time3 minutes
Total Time2 hours 13 minutes
Servings: 6 tacos

Ingredients

  • 1 pound goat meat
  • 2 cloves garlic minced
  • 1/2 cup light brown sugar
  • 1 teaspoon cumin
  • 1/2 cup tequila
  • 1/4 cup olive oil
  • 1 teaspoon salt
  • 2 tablespoons grape seed oil
  • Tortilla
  • To Garnish:
  • Creme fraiche
  • Scallions sliced
  • Pickled carrots
  • Cilantro freshly chopped
  • Lime wedges

Instructions

  • In a bowl combine the goat with the garlic, brown sugar, cumin, tequila, olive oil, and salt. Cover and let marinate in the refrigerator for 2 hours.
  • Heat a skillet on high heat and add the grape seed oil. Sear the goat meat quickly in the pan for about 3 minutes, turning regularly in the pan. They should be browned but still pink on the inside.
  • Place several tablespoons of meat in a tortilla and garnish with your desired toppings.

    They look delicious! But I know I’ll never get my wife to eat them. She won’t even eat lamb. I used to get my goat fix from an Indian place around the corner, when my wife was out without me.

    I think the videos are a good idea. The length of this one was just right. The sound was just a bit on the tinny side but I could hear all your commentary just fine. Some acoustics tuning in the kitchen might make a difference for the sound quality.

    Your commentary was a good mix of how to and taste bud adjectives. Nice work.

    Take the meat off the fire while building your taco. I was distracted by looking at the meat continuing to cook in the pan. Otherwise good video.

    I wish you would do more videos. That looks great but I think I will use some venison, because it’s in the freezer.
