When I was in Arkansas I made a new friend. And one night, while we all were digesting our 237th feast, she told us about this recipe she’d dreamed up using shrimp she’d had. It was smothered in scallions and tomatoes and lots and lots of butter. She agreed to make it for us as soon as possible. Feast number 238 was scheduled.

What I like about this is that you can really use what you have on hand. There is much flexibility, it is all about that sauce. That saucy sauce.

And it can be made in less than 30 minutes.

And it’s also simple. You simply lay your shrimp out in a baking dish.

Then pile on sliced green onion.

Then pile on diced tomato.

Then thinly slice some lemons and lay them over the top.

This is a pretty dish as much as it is tasty.

Next comes the sauce. She used melted butter… many sticks of it, though you can probably reduce that if you’re wanting to feel trim. Then some Worcestershire, pepper, red pepper flakes… I’m sure I’m forgetting all of her tricks but this is my version.

Preheat the oven to 350 degrees F and cover the baking dish with foil. You’ll bake it for 10 minutes, stir, and bake it again for about another 10. Just until the shrimp plump up and are red.

Take the top off and this is what it will look like.

Saucy! Or shall we say…. sawsy.

Give it another stir to stir up all of the flavors on the bottom. Then take a big scoop…

And pour it over rice, or spaghetti which will soak up that tasty sauce.

Mae sure you serve some crusty bread on the side to soak up all the juices!

What a heavenly shrimp feast! I grew up in Arkansas and visited my folks there in June, pretty place. It sounds like you had a good visit there too.

It really doesn’t get better than this – and I definitely think the title should be “Sawsy Shrimp” – love it!

I love that you can bake the shrimp in this technique- you don;t think to do that normally! That sauce looks so good, I just want some bread to soak it up with!

That looks as though it’s positively packed with flavor. I don’t think I could let any of that sauce go to waste.

Love how easy this is…and another dish I would do on my grill in lieu of turning on the oven. Heat on one side, dish on the other; makes your grill an oven!

That looks awesome. I love shrimp, and I love all the ingredients in this recipe. Over rice with cornbread would be my choice.

This reminds me of my family recipe for shrimp creole.

Georgia: Your recipe sounds delicious although I have a question. Your recipe calls for 2 sticks of butter but your directions only use 1 stick. Can you tell me what you are supposed to do with the other stick of butter. thanks.
