“Red Quinoa Salad”

Ingredients

  • 2 cups quinoa
  • 4 cups chicken stock or water
  • 1 bunch of scallions sliced thin
  • 1 cup grape tomatoes halved
  • 1 cucumber peeled and diced
  • Juice of 1 lemon
  • 3 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  • Cook the quinoa in the chicken stock or water for about 20 minutes on a low simmer until tender but still a bit crunchy to the bite. Transfer to a bowl and let cool for 10 minutes.
  • Add all of the remaining ingredients, adjusting the salt, pepper, lemon juice and olive oil to taste.
