“Root Soup”

Ingredients

  • 2 tablespoons vegetable oil
  • 2 carrots
  • 1 medium beet
  • 1 parsnip
  • 1 rutabaga
  • 1/2 celeriac (optional)
  • 1 medium onion
  • 2 cloves garlic
  • salt to taste (about 2 Tbs)
  • 3 cups water (+ more if needed)
  • 6 ounces soft Tofu (more for a lighter color)

Instructions

  • In large skillet heat oil.         
  • Add vegetables cut in pieces and saute them slowly about 12 minutes 
  • Add hot water and salt (broth if preferred) and cook another  12 minutes.
  • Transfer to food processor, add tofu and process 'til smooth. Add more water or broth as needed.
