“Breakfast Popsicles”

Ingredients

  • 2 1/2 cups unsweetened coconut milk or plain yogurt
  • 2 tablespoons chia seeds
  • 4 tablespoons raw honey or stevia
  • 2 tablespoons unsweetened shredded coconut
  • 1 tablespoon vanilla extract
  • Fresh or frozen fruit: sliced kiwi sliced banana, blueberries, raspberries, sliced strawberries

Instructions

  • Combine all of the ingredients in a blender, except the fruit, and let sit for 15 minutes so the chia seeds can reconstitute.
  • After 15 minutes, blend on high for 10 seconds.
  • Drop a few pieces of fruit into each popsicle mold and slowly pour in the liquid. Tap the mold
  • firmly against a hard surface to encourage the liquid to fill all the nooks and crannies in and
  • around the fruit. Top them off leaving 1/4-inch of head room at the top.
  • Place the lid on the molds and insert popsicle sticks into each slot. Freeze for 4 hours.
  • To serve, run warm water over the mold for several minutes, remove the lid, and gently pull on the popsicle stick until the popsicle loosens. You can store these in resealable plastic bags in the freezer.
  • Tip: Popsicle molds and sticks can be purchased inexpensively on the Internet. In a pinch you can use small paper cups with popsicle sticks and peel them away once they are individually frozen. The drawback is that they are not reusable, so investing in a popsicle mold one time will be a long-term money saver.
