You make that look easy, Georgia! I’ve seen other demonstrations that practically involve running a knife along every piece of muscle to release it, but your technique strikes me as more elegant. I’m def gonna invest in a good boning knife now.

I especially liked the removal of the wish-bone you do. I am not a de-boning specialist by any means but enjoy doing them now and then. I like to leave the wing and leg bones since I just grill or oven bake after applying my Piri Piri marinade. Smells up the house most wonderfully if done indoors.
